MUFii, muffato wine


Wine Muffato precious, unique and rare elegance, is obtained from dried grapes in accordance with nature, in medieval naturally ventilated rooms for several months and especially affected by noble rot (botrytis cinerea).

LOCATION ': Barengo (Novara) Piedmont, Italy
VINEYARD Stra Orba, first moraine hill "Monteregio" moraine ridge between the river Sesia and Agogna on the slopes of Monte Rosa massif
VARIETY: vine Doc Erbaluce 100% (Greek Novara)
TRAINING SYSTEM: Spurred cordon and Guyot
planting density 1800 vines / ha
ALTITUDE: morainic ridge behind the town. 250-280 meters above sea level
TYPE OF SOIL: alluvial moraine
CLIMATE: Cold winter and summer mitigated by the vast amount of land water, breezy evening by the currents of the Mottarone and Monte Rosa massif.
HARVEST: manual, towards the end of September

DRYING:
The MUFii is a product of the territory and of the Bareilly climate, soil and climate of a product. The vine and the soil are important, but the determining factor is the climate. When you reach a perfect harmony the product obtained is a "nectar." The drying of healthy grapes is the heart of this Muffato.
In Passitaia the grapes are from three to five months, here we observe the evolution of the noble rot that always appears and in massive form.
The phenomenon of botrytis cinerea in local unprotected and not forced, is unique to this area and is apparently disadvantageous to its climate, the alternation of sunny days, to easy or rainy morning mists, which was responsible for the transformation into a big advantage , to get a unique, elegant wine and territory.

WINE MAKING:
Fermentation: As for white wines, always in winter
in steel containers not monitored for temperature.
AGING: acacia barrels at a constant temperature roasting mild (12 ° -15 °) in the ancient sand caves Roero (ALBA)
AGING: at least 6 months in bottle
PRODUCTION: 2500 bottles of 0.5 lt
STORAGE: remarkable longevity, in suitable conditions for temperature and humidity, devoid of light,
bottle in a horizontal position
ALCOHOL: 13.5 °
